Peanut Butter Truffles

I love this as a treat I don’t make them often. I got this recipe from Kathleen Daeleman’s Cooking Thin Day Book. If I want to up the protein levels in this sweet treat, I take out some of the Non-fat milk and substitute it with an equal portion of protein powder.

Use the creamy peanut butter with this recipe. You won’t have to use as much honey because there’s more oil in the creamy PB.

1/2 cup creamy peanut butter
1/2 cup non-fat dry milk
1/4 cup wheat germ
1/4 cup old fashioned oatmeal
2-3 teaspons Honey

combine all the ingredients together in food processor (you can mix this by hand). roll into a rope and cut 16 equal slices. Roll each slice into a round ball. Can be individually wrapped. will keep 1 week in the fridge a month frozen.
